Herb & Garlic Roasted Leg of Lamb Recipe

Ingredients:
 • 1 Meadow Valley Farm leg of lamb (deboned or bone-in, approximately 4-5 lbs)
 • 3 tbsp olive oil
 • 4 garlic cloves (minced)
 • 2 tbsp fresh rosemary (chopped)
 • 2 tbsp fresh thyme (chopped)
 • 1 tsp paprika
 • Salt and pepper to taste
 • 1 lemon (zested and juiced)
 • 1 tsp Bob’s Blend of Spices Meadow Valley Lamb Rub (optional)

Instructions:
 1. Preheat your oven to 375°F (190°C).
 2. In a small bowl, mix olive oil, garlic, rosemary, thyme, paprika, lemon zest, and juice. Add salt, pepper, and optional lamb rub.
 3. Rub the mixture generously over the leg of lamb, ensuring it’s evenly coated.
 4. Place the lamb on a roasting rack in a baking pan.
 5. Roast for approximately 1.5–2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
 6. Let the lamb rest for 15 minutes before slicing to allow the juices to redistribute.
