Garlic & Herb Crusted Rack of Lamb Recipe
Ingredients:
• 1 Meadow Valley Farm Rack-A-Lamb (French-trimmed or regular, 8 ribs)
• 2 tbsp olive oil
• 3 garlic cloves (minced)
• 2 tbsp fresh rosemary (chopped)
• 1 tbsp fresh thyme (chopped)
• 1/4 cup breadcrumbs
• 2 tsp Dijon mustard
• Salt and pepper to taste
• 1 tsp Bob’s Blend of Spices Meadow Valley Lamb Rub (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Season the rack of lamb with salt, pepper, and optional lamb rub.
3. Sear the lamb in olive oil over medium-high heat until browned on all sides.
4. In a bowl, mix garlic, rosemary, thyme, breadcrumbs, and Dijon mustard. Spread the mixture evenly over the lamb.
5. Place the lamb in a roasting pan and bake for 20-25 minutes, or until the internal temperature reaches 125°F (52°C) for medium-rare.
6. Rest for 10 minutes before slicing into chops.
